This casserole is so easy and VERY yummy...you prepare it the night before, then wake up in the morning and pop it in the oven, go back to bed while it cooks and then wake up again to deliciousness!
(Defiantly a winner with the hubby)
Overnight Breakfast Casserole
Ingredients
6 eggs slightly beaten (plus an extra 2 maybe, eyeball it)
6 bread slices, torn into pieces
1lb cooked meat; ham, bacon, sausage (I did ½ lb. of sausage and ½ lb. bacon)
2 Cups shredded cheddar cheese divided
1/2 green pepper, diced
1/2 red pepper, diced
1/2 small sweet onion, diced
1 tsp. dry mustard
2 Cups milk
1 tsp. salt
1/2 tsp. pepper
(optional: salsa for the side)
Directions
Spray bottom of dish with Pam or any other type of greaser
Line bottom of 9x13 inch baking dish with bread pieces

Mix green pepper, red pepper, onion, and sprinkle over meat
Mix eggs, milk, dry mustard, salt, pepper, and 1 cup cheese
Pour mixture over peppers and onions
Finish the top with the rest of the cheese
Cover with foil and Refrigerate over night.
Bake at 350 degrees for about 1 hour or until the eggs aren't runny and are set.
(Might want to cover the last 1/2 hour with foil, to keep it from getting too brown)
